Barbecue Chicken Salad

Be sure to grill a couple of extra chicken breast-you'll make good use of them in this filling salad. It's good served over shredded lettuce or in a sandwich.

Serves 6 (1/2 cup)

1/2 cup Kraft fat-free mayonnaise
2 tablespoons Healthy Choice barbecue sauce
1 tablespoon sweet pickle relish
1/2 teaspoon prepared yellow mustard
1 teaspoon dried parsley flakes
2 full cups diced cooked chicken breast
1/2 cup chopped celery
1/4 cup finely chopped onion

In a large bowl, combine mayonnaise, barbecue sauce, pickle relish, mustard, and parsley flakes. Add chicken, celery, and onion. Mix well to combine. Cover and referigerate for at least 30 minutes. Gently stir again just before serving.

HINT: 1. Good used as a sandwich filling or spooned over lettuce.
2. If you don't have leftovers, purchase a chunk of cooked chicken breast from your local deli.
