Grandma's Chicken Noodle Soup
Harry Martin, Plano, TC, requested a filling chicken noodle soup that would remind him of the kind his grandmother used to prepare for him. This satisfied Cliff and me - I it's think the dash of dill that does the trick.
Serves 4 (1 1/2 cups)
4 cups (two 16-ounce cans) Healthy Request Chicken Broth
1/2 cup water
1 cup chopped onion
1 1/2 cups sliced carrots
1 1/2 cups slices celery
1 1/2 cups (8 ounces) diced cooked chicken breast
1 1/4 cups (2 1/4 ounces) uncooked noodles
1/8 teaspoon black pepper
1/2 teaspoon JO's Dill Seasoning
In a large saucepan, combine chicken broth, water, onion, carrots, and celery. Bring mixture to a boil. Stir in chicken, uncooked noodles, black pepper, and JO's Dill Seasoning. Lower heat, cover, and simmer for 15 to 20 minutes or until vegetables and noodles are tender, stirring occassionally. Mix well before serving.
HINT: 1. If you don't have leftovers, purchase a chunk of cooked chicken breast from your local deli.
2. While not as flavorful, dried dill weed may be substituted for JO's Dill Seasoning.
