Hamburger Jumble

Hamburger Jumble

Katherine Brown, LeClaire, IA, shared a wonderful casserole with a wonderful name! I think your "meat & potato" lovers will love this as much as mine did.

Serves 6

16 ounces ground 90% lean turkey or beef
3 cups canned tomatoes, coarsely chopped, undrained (28-ounce can)
2 cups shredded cabbage
1 cup canned sliced carrots, rinsed and drained (8-ounce can)
1 3/4 cups canned Swanson beef broth (14 1/2-ounce can)
2/3 cup Carnation nonfat dry milk powder
1 teaspoon dried onion flakes
1 teaspoon dried parsley flakes

Preheat oven to 350 degrees. In a large skillet sprayed with butter-flavored cooking spray, brown meat. Stir in tomatoes, cabbage and carrots. In a covered jar, combine beef broth, dry milk powder, onion flakes and parsley flakes. Shake well to combine. Pour broth mixture into meat mixture. Mix well to combine. Lower heat. Simmer 5 minutes. Pour mixture into an 8x8-inch baking dish. Bake 25 to 30 minutes. Place baking dish on a wire rack and let set 5 minutes. Cut into 6 pieces.
