Tomato Basil Meat Loaf

It's truly amazing what a wallop of great taste just bit of dried spice can bring to a classic meat loaf recipe. I like to crumble the basil into the dish to release every last bit of flavor it has hidden in each leaf.

Serves 6

16 ounces extra-lean ground sirloin beef or turkey breast
1/2 cup + 1 tablespoon dried fine bread crumbs
2 teaspoons dried basil leaves*
3/4 cup finely chopped onion
1 (10 3/4-ounce) can Healthy Request Tomato Soup*

Preheat oven 350 degrees. Spray a 9-by-5-inch loaf pan with olive oil-flavored cooking spray. In a large bowl, combining meat, bread crumbs, 1 teaspoon basil, onion, and 1/3 cup tomato soup. Mix well to combine. Pat mixture into prepared loaf pan. Bake for 40 minutes. Stir remaining 1 teaspoon basil into remaining tomato soup. Evenly spoon soup mixture over partially baked meat loaf. Continue baking for 15 minutes. Place loaf pan on a wire rack and let set for 5 minutes. Cut into 6 servings.
