Jellied Corn Relish
Serves 6
1 (4-serving) package JELL-O sugar-free lemon gelatin
3/4 cup boiling water
2 cups (one 16-ounce can) whole-kernel corn, rinsed and drained
1/3 cup sweet pickle relish
1/4 cup (one 2-ounce jar) chopped pimiento, drained
In a large bowl, combine dry gelatin and boiling water. Stir well to dissolve gelatin. Add corn, pickle relish, and undrained pimiento. Mix well to combine. Pour mixture into an 8-by-8-inch dish. Refrigerate until firm, about 3 hours. Cut into 6 servings.
