Pot Of Gold Pork Cutlets


Serves 4
*Freezes Well

2 cups (one 16-ounce can) cream-style corn
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/4 teaspoon black pepper
4 (4 ounce) lean pork cutlets or tenderloins

Preheat oven to 350 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a medium bowl, combine corn, onion, green pepper, and black pepper. Spread mixture into prepared baking dish. In a large skillet sprayed with butter-flavored cooking spray, lightly brown cutlets on both sides. Evenly arrange browned cutlets over corn mixture. Bake for 40 to 45 minutes. Place baking dish on a wire rack and let set for 5 minutes. Divide into 4 servings.

HINT: Don't over brown pork or it will become tough.
