Ham Pasta Salad with Maize Dressing


What inspired me to make a salad dressing with creamed corn I have no idea, but it seemed like it could work. Cliff really loves creamed corn--in fact, I haven't known a man who didn't--and this is a favorite dish of his.
Serves 4 (1 1/4 cups)

1 1/2 full cups (9 ounces) diced Dubuque 97% fat-free ham or any extra-lean ham
1 1/2 cups cold cooked rotini pasta, rinsed and drained
1 cup diced celery
1 cup (one 8-ounce can) cream-style corn
1/3 cup Kraft fat-free mayonnaise
2 teaspoons dried parsley flakes

In a large bowl, combine ham, rotini pasta, and celery. In a small bowl, combine corn, mayonnaise, and parsley flakes. Add corn mixture to pasta mixture. Mix well to combine. Cover and refrigerate at least 30 minutes. Gently stir again just before serving.

HINT: 1 cup uncooked rotini pasta usually cooks to about 1 1/2 cups.
