Apple-Scotch Salad

After just one bite, this just may be the "apple of your eye" as far as salads are concerned. Two of the apples of my eye, my daughter-in-law Pam and grandson Zach both loved this.
Serves 8 (1/2 cup)

1 (4-serving) package JELL-O sugar-free instant butterscotch pudding mix
2/3 cup Carnation nonfat dry milk powder
1 1/3 cups water
1/4 cup Peter Pan reduced-fat peanut butter
1/3 cup Cool Whip Lite
4 cups unpeeled Red Delicious apples (8 small)

In a large bowl, combine dry pudding mix, and dry milk powder. Add water and peanut butter. Mix well, using a wire whisk, until well blended. Stir in Cool Whip Lite. Add apples. Mix well to combine. Cover and refrigerate at least 30 minutes. Gently stir again just before serving.

Each serving equals:
HE: 1 Fruit, 3/4 Protein, 3/4 Fat, 1/4 Skim Milk, 19 Optional Calories
