Curried Chicken and Fruit Salad

This salad is perfect for an elegant lunch or supper.
Serves 4

8 ounces, skinless chicken breast
2 tablespoons sweet n' sour sauce
2 teaspoons curry powder
1/4 teaspoon cumin
1/2 cup sour cream
Romaine lettuce leaves, washed, died and chilled
1 orange, peeled and segmented
1 kiwi fruit, peeled and sliced in rings
1 tablespoon chopped fresh mint

Tear cooled chicken into bite size pieces. In large bowl combine sauce, curry powder, cumin and sour cream to make dressing. Stir chicken into dressing and chill. Line platter with lettuce leaves and arrange chicken mixture over top. Arrange fruit around chicken. Sprinkle mint over all.


NOTE: 1 tablespoons sweet n' sour sauce = 1 fruit card. You can usually find in the oriental section of the supermarket. Yes, you can have sour cream! 2 tablespoons = 1 fat card. You see, it isn't a matter of giving up all the goodies, it is simply a matter of PORTION PATROL.
