Egg-Cheese Sandwiches

Both Pam and Tommy thought these sandwiches were quite tasty. Maybe your brown-bagger will think so too!

Serves 4

1/4 cup fat-free mayonnaise (10 calories per Tablespoon)
2 teaspoons Splenda
1 teaspoon prepared mustard
1 teaspoon white vinegar
2 teaspoons sweet pickle relish
1/4 teaspoon black pepper
3 hard-cooked eggs, chopped
3 oz shredded reduced-fat Chedder cheese (3/4 cup)
4 reduced-calorie hamburger buns (80 calories per bun)

In a medium bowl combine mayonnaise, Splenda, mustard, vinegar, pickle relish and black pepper. Add eggs and cheese. Mix gently to combine. Place about 1/3 cup mixture on each bun.

Each serving equals:
HE: 1 3/4 Protein (3/4 limited), 1 Bread, 13 Optional Calories
