Lemon Salad

Lemon Salad

Either one of these dishes will add eye-appeal to your meal.

Serves 8

2 (4-serving) pkgs JELL-O sugar-free lemon gelatin
2 cups boiling water
1 (8-ounce) can crushed pineapple, packed in fruit juice, drain and reserve juice
1 cup Cool Whip Free
4 marachino cherries, chopped
1 cup fat-free cottage cheese

In a large bowl, combine dry gelatin and boiling water. Mix well to dissolve gelatin. Add enough water to reserved pineapple juice to make 1 1/2 cups liquid. Add to gelatin mixture. Mix well to combine. Stir in pineapple. Refrigerate until partially set. Gently fold Cool Whip Free, cherries, and cottage cheese. Evenly pour into an 8-by-8-inch dish. Refrigerate until firm, about 3 hours. Cut into 8 servings.
