Meat Stuffed Tomatoes

I loved this unusual way to serve my favorite summer vegetable, tomatoes.

Serves 4

8oz ground turkey or beef (90% lean)
4 medium tomatoes
1/2 cup chunky salsa
1/4 cup fat free mayonnaise

Preheat oven to 375 degrees. In a large skillet sprayed with olive flavored cooking spray, brown meat. Cool completely. Cut tops off of tomatoes. Scoop out centers. In medium bowl combine cooled meat, salsa and mayonnaise. Stuff tomatoes with meat mixture. Bake in 8x8 baking dish 20-25 minutes.

Each serving equals:
HE: 1 1/2 Protein, 1 1/4 Vegetable, 8 Optional Calories
