Mexicali Loose Meat Sandwiches


Cliff Lund found himself helping with "kitchen detail" while we were traveling in our motor home last fall on book tour. He surprised himself as much as he did me with this very tasty sandwich filling. Why don't you try it and see if you're surprised, too!

Serves 6

16 ounces ground 90% lean turkey or beef
1/2 cup chopped onion
1/2 cup chopped green bell pepper
1 cup (one 8-ounce can) Hunt's Tomato Sauce
2 teaspoons Jo's Chili Seasoning
1 tablespoon Brown Sugar Twin
1 cup frozen whole-kernal corn, thawed
6 reduced-calorie hamburger buns


In a large skillet sprayed with olive oil-flavored cooking spray, brown meat, onion, and green pepper. Stir in tomato sauce, Jo's Chili Seasoning, and Brown Sugar Twin. Add corn. Mix well to combine. Lower heat and simmer for 5 minutes or until mixture is heated through, stirring occasionally. For each sandwich, spoon about 2/3 cup meat mixture between a bun.
