Mushroom Meat Loaf

Serves 6

16 ounces extra-lean ground sirloin beef or turkey breast
1/2 cup + 1 tablespoon (2 1/4 ounces) dried bread crumbs
1/3 cup Carnation Nonfat Dry Milk Powder
1/8 teaspoon black pepper
2 (2.5-ounce) jars sliced mushrooms, drained and 1/4 cup liquid reserved
1 (10 3/4-ounce) can Healthy Request Cream of Mushroom Soup
1 teaspoon dried parsley flakes
1/2 cup fat-free milk

Preheat oven to 350 degrees. Spray an 8-by-8-inch baking dish with butter-flavored cooking spray. In a large bowl, combine meat, bread crumbs, dry milk powder, black pepper, mushrooms, and reserved liquid. Pat mixture into prepared baking dish. Bake for 40 to 45 minutes. Place baking dish on a wire rack and let set for 5 minutes. Meanwhile, in a medium saucepan, combine mushroom soup, parsley flakes, and milk. Cook over medium heat until mixture is heated through, stirring occasionally. Cut meatloaf into 6 servings. When serving, spoon about 1/4 cup sauce over each piece of meat loaf.
