Pecan Fruit Salad

Pecan Fruit Salad

This is so quick and tasty, I'm sure it will become a family standard.

Serves 8 (3/4 cup)

1 cup pineapple chunks, packed in its own juice, drained (reserve juice)
1 medium banana, diced
2 small apples, cored and diced
1 cup canned mandarin oranges, rinsed and drained
1 oz chopped pecans (1/4 cup)
1 (6 serving) package sugar free instant vanilla pudding

In medium bowl, combine pineapple, banana, apples, mandarin oranges and pecans. Add enough water to reserved pineapple juice to make 1 1/2 cups liquid. Pour into medium bowl; add dry pudding mix. Mix well with a wire whisk. Stir into fruit. Mix gently to combine.

Each serving equals:
