Apple Coleslaw with Peanut Butter Dressing

Serves6 (3/4 cup)

3 cups shredded cabbage
1 cup diced unpeeled Red Delicious apple (2 small)
1/2 cup raisins
1/4 cup chopped dry roasted peanuts (1 ounce)
2 tablespoons Peter Pan reduced-calorie creamy peanut butter
1/2 cup Kraft fat-free mayonnaise
1 tablespoon skim milk

In a large bowl, combine cabbage, apples, raisins and peanuts. In a small bowl, combine peanut butter, mayonnaise and milk. Mix well until mixture is smooth. Add peanut butter mixture to cabbage mixture. Mix gently to combine. Cover and refrigerate until ready to serve.

HINT: To plum up raisins without "cooking", place in a glass meauring cup and microwave on HIGH for 30 seconds.
