Savory Pesto Meatloaf
This one is for James. If he says meatloaf is good, you can bet it is, and he declared this one GREAT. He's always been my meatloaf lover and luckily he is passing that trait on to Zach and Josh.
Serves 6
16 ounces ground 90% lean turkey or beef
3/4 cup (3 ounces) dried fine bread crumbs
1 (10 3/4-ounce) can Healthy Request Tomato Soup
1 tablespoon JO's Pesto Seasoning
3/4 cup finely chopped onion
1/4 teaspoon black pepper
Preheat oven to 350 degrees. Spray a 9-by-5-inch loaf pan with butter-flavored cooking spray. In a large bowl, combine meat, bread crumbs, tomato soup, JO's Pesto Seasoning, onion, and black pepper. Mix well using hands. Pat mixture into prepared loaf pan. Bake 50 to 55 minutes. Place loaf pan on a wire rack and let set 5 minutes. Cut into 6 servings.
HINT: While not as flavorful you can substitute 1 1/2 teaspoons dried basil, 1 teaspoon dried parsley flakes and 1/2 teaspoon dried minced garlic for JO's Pesto Seasoning.
