Skillet Beets Extraordinaire

When I was young, I wanted nothing to do with beets. Now that I'm older and wiser, they are my favorite veggie!

Serves 4 (1/2 cup)

1/4 cup Kraft Fat Free Thousand Island Dressing
2 tablespoons Land O Lakes no-fat sour cream
1 teaspoon parsley flakes
1 teaspoon dried onion flakes
2 cups (one 16-ounce can) diced beets, rinsed and drained
1/3 cup (1 1/2 ounces) shredded Kraft reduced-fat mozzarella cheese

In a large skillet sprayed with butter-flavored cooking spray, combine Thousand Island dressing, sour cream, parsley flakes and onion flakes. Stir in beets and mozzarella cheese. Cook over medium-low heat for 6 to 8 minutes or until mixture is heated though, stirring occasionally.

Each serving equals:
