Slim 'N' Trim Macaroni and Cheese
This recipe taste fattening but isn't. Remember when you used to eat several pieces of bacon at a sitting. Now you know the flavor of one peice of bacon can go a long way. Make your new Deal-A-Meal last a lifetime.
Makes 8 servings
3-1/2 cups cooked, drained macaroni
7 ounces (1-3/4 cups) shredded, sharp chedder cheese
1/2 cup finely chopped onion
3 tablespoons chopped parsley
1 3/4 cups low-fat cottage cheese
1/2 cup evaporated skim milk
2 teaspoons Dijon style mustard
Salt and pepper to taste
1 small slice bacon, cooked crisp and drained on paper towel
1 slice bread, crumbled
3 tablespoons grated parmesan cheese
Preheat oven to 350 degrees F. In large bowl, combine macaroni, chedder cheese, onion, parsley. In blender or food processor combine cottage cheese, milk and mustard. Process until smooth. Pour over macaroni micture and mix thoroughly. Season to taste with salt and pepper. Turn into a 2-quart casserole dish coated with non-stick spray. Crumble bacon and mix with bread crumbs and Parmesan. Sprinkle over casserole. Bake 20 minutes.
NOTE: The amount of vegetable in this recipe works out to only 1 tablespoon per person, therefore you don't need to use a vegetable card/window for such a small amount. However if you wanted to bring it up to a vegetable card/window, you could serve this with 1/3 cup steamed vegetables per a person (such as steamed broccoli flowerettes).
