Turkey Meat Loaf Ring
I bet you've crept down to the refrigerator in the night for a slice or two or more of cold meatloaf. Well you don't have to be furtive any more as long as you maintain PORTION PATROL! Try this in a sandwich...as if I had to tell you that.
Makes 8 servings
*zero fat cards
14 ounces ground turkey
2 eggs, lightly beaten
18 saltine crackers, crumbled
1/4 cup uncooked oatmeal
3 tablespoons oat bran
1 cup green peas
1/3 cup finely chopped onion
1/3 cup corn
2 tablespoons chopped parsley
1 tablespoon Worcestershire sauce
1 clove garlic, minced
1/4 teaspoon each salt and freshly ground pepper
6 ounces (3/4 cup) tomato sauce
2 cups steamed cauliflower or broccoli (to round out menu)
Preheat oven to 350 degrees F. In large bowl thoroughly mix all ingredients (except steamed vegetables). Turn into ring pan or 9x5-inch loaf pan that has been coated with non-stick spray.
Bake 50 to 60 minutes. Let stand 15 minutes. Unmold onto serving platter and garnish with steamed vegetables.
If the thought of green peas gives you the heebie-jeebies, (I used them to flick my brother in the face), then just substitute with extra corn. Remember that peas and corn count as bread cards!
