Honey Baked Custard

Honey Baked Custard 
Serves 6

3 eggs
1/4 cup of honey
1 teaspoon vanilla extract
2 1/2 cups milk
ground nutmeg or cinnamon to taste

Beat eggs, honey and vanilla with wire whisk in bowl. Stir in milk. Spoon into glass baking dish or 6 custard cups; sprinkle with nutmeg. Place in larger pan of hot water. Bake large baking dish at 325 degrees for 1 hour. Bake custard cups at 350 degrees for 40 to 45 minutes. Custard is ready when knife inserted in middle comes out clean. Serve warmed or chilled. This contains lots of protein with only minimal sweetening. May substitute maple syrup for honey.

Coconut Custard: Mix 1/4 to 1/2 cup unsweetened coconut with other ingredients. Garnish cooled custard with fresh or frozen strawberries if desired.
