Cream Cheese Frosting

Cream Cheese Frosting 

 Serves 12

8 oz cream cheese, softened
1/2 Cup butter, softened
2 to 4 Tablespoons honey
1 teaspoon vanilla extract
1/2 chopped pecans

Beat cream cheese and butter in mixer bowl till fluffy. Beat in honey to taste. Add vanilla and pecans; mix well. Store in refrigerator. This is delicious on carrot cake. May omit pecans or substitute other nuts.

Variations: Banana-Nut: Omit honey or reduce honey to 2 Tablespoons and beat in one small ripe banana. Chill until spreading consistency. Decorate frosted cake with banana chips or raisins.

Tinted: Add 1/4 to 1/2 Cup unsweetened crushed raspberries, blueberries or strawberries.

Butterless: Omit butter and substitute thawed orange juice or apple juice concentrate for honey or omit vanilla if desired.
