Dilled Corn and Snow Peas


Serves 4 (2/3 cup)

2 cups fresh or frozen snow peas, thawed
2 cups fresh or frozen whole-kernel corn, thawed
1/2 cup chopped red bell pepper
1/4 cup water
2 teaspoons reduced-calorie margarine
1/2 teaspoon JO's Dill Seasoning
1/8 teaspoon black pepper

In a large skillet, combine snow peas, corn, red pepper, and water. Cook over medium heat for 3 to 5 minutes, or just until vegetables are tender, stirring often. Drain, if necessary. Add margarine, JO's Dill Seasoning, and black pepper. Mix well to combine. Lower heat and simmer for 2 to 3 minutes, stirring occasionally. HINT: 1. Thaw peas and corn by placing in a colander and rinsing under hot water for one minute. 2. While not as flavorful, dried dill weed may be substituted for JO's Dill Seasoning.
