Farm House Skillet


Serves 4 (3/4 cup)

3/4 cup chopped onion
3/4 cup chopped green bell pepper
4 eggs or equivalent in egg substitute
1/3 cup Carnation Nonfat Dry Milk Powder
1/3 cup water 1 cup (one 8-ounce can) cream-style corn
1 cup fresh or frozen whole-kernel corn, thawed
3/4 cup (3 ounces) shredded Kraft reduced-fat Cheddar cheese

In a large skillet, saute onion and green pepper for 5 minutes. Stir in eggs. In a small bowl, combine dry milk powder, water, and cream-style corn. Add whole-kernel corn and Cheddar cheese. Mix well to combine. Stir corn mixture into egg mixture. Lower heat and simmer for 5 minutes, or until mixture is heated through and eggs are set, stirring occasionally. HINT: Thaw corn by placing in a colander and rinsing under hot water for one minute.
