Grandma's Chicken Corn Soup


Serves 4 (1 1/2 cups)
*Freezes Well

4 cups (two 16-ounce cans) Healthy Request Chicken Broth
1 cup water
8 ounces skinned and boned uncooked chicken breast, cut into
16 pieces 1 cup chopped celery
1/2 cup chopped onion
1 cup fresh or frozen whole-kernel corn, thawed
1 scant cup (1 1/2 ounces) uncooked noodles
1 teaspoon dried parsley flakes
1/4 teaspoon dried minced garlic
1/4 teaspoon black pepper

In a large saucepan, combine chicken broth, water, chicken, celery, and onion. Bring mixture to a boil. Stir in corn and uncooked noodles. Add parsley flakes, garlic, and black pepper. Mix well to combine. Lower heat, cover, and simmer for 20 minutes or until chicken and vegetables are tender, stirring occasionally.

HINT: Thaw corn by placing in a colander and rinsing under hot water for one minute.
