Heavenly Cherry Salad


Here's a terrific way to win a man's heart! You've got all the ingredients for a party of flavors, and the rosy color makes it look extra-delicious!
Serves 6

1 (4-serving) package JELL-O sugar-free vanilla cook-and-serve pudding mix
1 (4-serving) package JELL-O sugar-free cherry gelatin
1/4 cup water
1 cup (one 8-ounce can) crushed pineapple, packed in fruit juice, undrained
2 cups (one 16-ounce can) tart red cherries, packed in water, undrained
1 teaspoon coconut extract
3/4 cup Cool Whip Lite
3 tablespoons (3/4 ounce) chopped pecans
1/2 cup (1 ounce) miniature marshmallows
2 tablespoons flaked coconut


In a medium saucepan, combine dry pudding mix, dry gelatin, water, and undrained pineapple. Stir in undrained cherries. Cook over medium heat, stirring often, until mixture thickens and starts to boil, being careful not to crush cherries. Remove from heat. Stir in coconut extract. Place pan on a wire rack and let set 20 minutes. Spoon cherry mixture into a large bowl. Add Cool Whip Lite, pecans, marshmallows, and coconut. Mix gently to combine. Spread mixture into an 8-by-8-inch dish. Cover and refrigerate at least 1 hour. Divide into 6 servings.
