Frosted Cauliflower-Broccoli Bake

A tasty way to enjoy your vitamins and minerals.
Serves 4

1 (16 oz) pkg frozen broccoli & cauliflower blend pieces
1/2 cup fat free mayonnaise
2 teaspoons prepared mustard
1/4 teaspoon lemon pepper
1 teaspoon dried parsley flakes
3 oz shredded reduced fat Cheddar cheese (3/4 cup)

Preheat oven to 375 degrees. In medium saucepan cook broccoli and cauliflower in water until crisp-tender. Drain. In large bowl combine mayonnaise, mustard, lemon pepper, and parsley. Add drained vegetables. Mix gently to combine. Pour mixture into 8x8 baking dish sprayed with butter-flavored cooking spray. Sprinkle cheese evenly over top. Bake uncovered 15 minutes.
