Cucumber-Cottage Cheese Salad

Serves 4

1 1/2 cups fat-free cottage cheese
2 tablespoons Kraft fat-free mayonnaise
2 1/4 cups diced unpeeled cucumbers with seeds removed
1/4 cup chopped onion
1/8 teaspoon black pepper
lettuce leaves

In a medium bowl, combine cottage cheese and mayonnaise. Stir in cucumbers, onion, and black pepper. Cover and refrigerate for at least 1 hour. For each serving, place lettuce leaf on a salad plate and spoon about 3/4 cup salad mixture over top.

Each Serving Equals:
Diabetic: 1 Vegetable, 1/2 Protein
