Italiano Meatloaf

Serves 6

16 oz ground turkey or beef (90% lean)
1/2 cup canned sliced mushrooms, drained
1/4 cup chopped onion
1/4 cup chopped green bell pepper
1 1/2 oz dried bread crumbs (6 tablespoons)
1 teaspoon Italian seasoning
1/4 teaspoon minced garlic
1 3/4 cups Hunt's tomato sauce
1 tablespoon granular Splenda
1 teaspoon dried parsley flakes


Preheat oven to 375 degrees. In large bowl combine meat, mushrooms, onion, green pepper, bread crumbs, Italian seasoning, garlic and 1/4 cup tomato sauce. Mix well using hands. Pat mixture into 8x8 baking dish sprayed with olive flavored cooking spray. In a small bowl combine remaining 1 1/2 cups toamto sauce, Splenda, and parsley flakes. Spread mixture evenly over meat. Bake uncovered 40 minutes.
