Applesauce-Rice Pudding
Serves 6 *Freezes Well
1 (4-serving) package JELL-O Sugar Free Instant Vanilla Pudding Mix
1 1/2 cups skim milk
1/4 cup raisins
1 cup unsweetened applesauce
1/4 cup Cool Whip Lite
2 cups cold cooked rice
1/2 teaspoon ground cinnamon
In a large bowl, combine dry pudding mix and skim milk. Mix well using a wire whisk. Stir in raisins and applesauce. Blend in Cool Whip Lite. Add rice and cinnamon. Mix well to combine. Evenly spoon mixture into 6 dessert dishes. Refrigerate at least 30 minutes.
HINT: 1) To plump up raisins without "cooking", place in a glass measuring cup and microwave on HIGH for 20 seconds. 2) 1 1/3 cups uncooked rice usually cooks to about 2 cups.
